Cheesy Hash Brown Casserole Recipe

Ingredients
  • 5 tablespoons unsalted butter, divided
  • 4 cups (32 ounces) frozen shredded hash browns, thawed
  • 1 (10 ½-ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 small onion, chopped (about ½ cup)
  • 2 cups shredded cheddar cheese, divided
  • ¼ teaspoon black pepper
Directions
  1. Preheat the oven to 350 F. Use 1 tablespoon of butter to grease a 9x13-inch baking dish.
  2. In a small bowl, melt the remaining 4 tablespoons of butter. In a large bowl, combine the hash browns, cream of chicken soup, sour cream, onion, 1 cup of cheddar cheese, melted butter, and the black pepper.
  3. Mix well breaking up any lumps. Pour mixture into prepared baking dish. Top with the remaining 1 cup of cheddar cheese.
  4. Bake for 50 minutes until bubbly and golden brown. Garnish with the chopped chives.
  5. Serve immediately while hot.
